Every once in a while when I am feeling supremely lazy, I throw together a dinner that turns out to be one of Rich's favorites. Tonight's accident I shall call dump truck dinner. It's a crock pot meal, too... Even better! Only one pot to clean.
16 oz bag frozen meatballs (not Italian!)
1/2 bag frozen corn (12 oz bag)
1/2 bag frozen green beans (12 oz bag)
3 small baking potatoes, peeled and chopped
1 small jar gravy (beef or turkey is fine)
1 cup broth (beef, chicken, etc)
Salt, pepper, and 3 cloves fresh garlic (smash with the back of a large knife to release flavor but it should stay "intact")
Mix together and simmer on low about 6 hours (or high for 4 hours) until potatoes are fork tender. Eat.
While I was eating this I briefly entertained the thought of adding carrots in the future.
